Pastelon and Coconut Rice (Puerto Rican Lasagna)

I love Puerto Rican recipes, they pack soo much freakin flavor!  Who would have thought of using sweet plantains instead of pasta!

    I made the Pastelon and Coconut Rice on Monday night. My family raved over it! The sweetness (and unique nature) of using plantains instead of noodles was a welcomed changed from the “same old, same old” lasagna. And the coconut rice was soooooo good, and a great side. I also made the cabbage/collards/kale greens as my veggie, and the meal was a great bit HIT!
